In the Marches where the oenologist offer is larger and larger and based on the research of high quality, the DOC wines represent the excellence and the new trend towards the rediscovery the territory: an appreciation of the wine-producing vocation of particular areas and the autochthonous viticultural patrimony.

This new productive philosophy is linked to the research of innovative processes of vinification and ageing which are personalized and interpreted by the different producers in the exploration of the unexpressed potentiality of the territory and its wines.

The amplification of the typology gratifies every requirement: nowadays the range of wines from Marches is completer and completer, from the easy drinking white wines which are used to match traditional fish foods of the Adriatic coast until the older wines; from the rosé and new wines until the young and light wines and from the most complex and structured wines of a higher alcoholic content until the sparkling wines and the perfumed passitos which are so good with the traditional anise cakes or dried fruits.

The Piceno DOC wines are the real expression of the process of Marches oenology's renovation: so that they represent the will to rediscover the autochthonous through the cultivation of Pecorino and Passerina vineyards, which are the best white wines of the Offida DOC. The Offida Pecorino is excellent with sea food and shellfish but also with white meat. The Offida Passerina is very good with fish or typical olives of Ascoli Piceno, in particular in its sparkling version (others versions: Passito and Vino Santo). The Offida red wine is born from Montepulciano and Cabernet Sauvignon and it is very good with traditional meat foods of the territory.

The DOC wines of the Piceno are also the expression of the region's attention to give its traditional red wines new value and quality, as Rosso Piceno Superiore, which is produced in a very little area between Ascoli Piceno and San Benedetto del Tronto (on the contrary Rosso Piceno is produced in 3 of 4 Marches' provinces). Its structure, the intensive colour and the perfume of plum and liquorice makes it good for lamb and rabbit dishes, mature cheese like a local cheese called "pecorino".

Falerio dei Colli Ascolani is born from Trebbiano, Passerina and Pecorino grapes from the province of Ascoli Piceno. It is so good as aperitif, it is fresh and lively and for this reason it is perfect with traditional olives of Ascoli Piceno, both pickled and stuffed and fried, and obviously with fish and also vegetables.
